Honey directly from the “honey comb” (from the pokok) is liquid and remains liquid For an average of about two ( 02) months. The honeys starts to crystallize / becomes hard ( like sugar) after that.

If honey DOESN’T crystallize it is NOT real or good honey, because 70% of honey is Fructose and Glucose ( 38% is Fructose and 31% is Glucose to be more accurate)

After about 2 months the fructose and glucose  starts to separate. Fructose will rise upwards and Glucose rest at the bottom.

What is honey?

Honey is a thick, golden-colored liquid produced by honeybees and other insects, like some bumblebees and wasps.

It comes from the nectar within flowers, which bees collect and store in their stomachs until back at the hive.

Nectar is made up of sucrose (sugar), water, and other substances. It’s roughly 80 percent carbohydrate and 20 percent water. Bees produce honey by ingesting and regurgitating the nectar over and over again. This process removes the water.

Afterward, bees store the honey in honeycombs to be used as an energy source during the winter when it’s harder to find food.

Although it’s a natural sweetener, honey has a bit more carbohydrates and calories per teaspoon than table sugar.

According to the United States Department of Agriculture Trusted Source, 1 tablespoon of raw honey has about 60 calories and 17 grams of carbohydrates.

Honey also contains many vitamins and minerals, including iron, vitamin C, folate, magnesium, potassium, and calcium. It’s also an antioxidant, which are substances that prevent and slow cell damage.


Why does my honey crystallize?

It's actually a sign of high quality honey. Honey will even crystallize when it's still in the comb.

Crystallization occurs because of the natural qualities inside. The natural sugars in honey (glucose and fructose) will bind together and begin to form little crystals, which can start making your honey harder. With differing blends, some honey will begin to crystallize faster than others.


You may follow these tips for restoring it to its original consistency:

  1. Place the honey jar in a pot of warm water – remember to remove the lid first!
  2. Heat gently with very low heat to avoid damaging it: overheating can indeed diminish honey’s natural flavor.
  3. Stir until all the crystals dissolve and remove the jar once the honey is liquid again.

Note that you should not use a microwave to decrystallize honey, as this will destroy its beneficial enzymes.
